Description

In the summer you eat new small potatoes, while in the winter you need the big more starchy ones and a nice, tasty mash is therefore often served in cold time of the year. In this dish, mash is served with fried bacon and beetroot. It you do not want to eat meat, you can substitute the bacon with walnuts.

  1. Peel and cut the potatoes into big chunks, then peel and cut the celeriac in chucks. Boil them until tender. Drain them while reserving the cooking liquid for later. Mash the potatoes with a balloon whisk until a smooth texture. Add butter and cooking liquid. Season to taste with salt and pepper.

    While the potatoes are boiling pan-fry the bacon at medium heat until golden and crispy. Remove from the pan using a slotted spoon and let the fat remain on the frying pan. Add the chopped onions, beets, and celery and fry until golden brown, add the bacon in, season with pepper.

    Serve the mash with bacon and onions on top. Sprinkle with parsley.
