Baked onions stuffed with spinach and walnuts

Description

Onions had become the sidekick that we took for granted, but their time has come to be in the spotlight on their own terms. They are easy to buy, cheap and – most importantly – super delicious. A dream for everyday cooking.

  1. Preheat the oven to 180°C/350°F/Gas Mark 4.
  2. Wash the onions really well, keep all the skins on. Cut them in half through their roots and place on a baking tray lined with baking parchment.
  3. Brush with the 1 tbsp of olive oil and sprinkle with the thyme leaves, salt and pepper.
  4. Bake in the oven for 30 minutes.
  5. Meanwhile, wash the spinach well, then drain. Place in a saucepan and wilt until it collapses, then drain it in a sieve.
  6. Put the 3 tbsp of olive oil in a frying pan and sauté the garlic and walnuts for 2 minutes, taking care not to burn them. Turn off the heat, add the spinach to the walnut mixture and season to taste.
  7. Now take the onions out of the oven and carefully (they’re hot!) remove some of the inner layers from each, leaving a couple of layers in the shells.
  8. Add the inner onion layers to the walnut and spinach mixture, stirring them in. Spoon the mixture into the baked onion shells, then scatter with the cheese.
  9. Return to the oven and bake for 10 minutes. Serve right away. These would be great with XXXXXXX (see page 000). Please add this serving suggestion
