Fried Cod Roe on Rye Bread

2 l water
1 tbsp salt
1 tbsp whole pepper
½ lemon
300g cod roe
4 tbsp mayonnasie
3 lovage leaves
butter for frying
4 slices of rye bread


BRING THE WATER TO A BOIL IN A POT WITH SALT, PEPPER AND LEMON. Gently place the cod roe in the pot and let it simmer for 30 minutes. Lift it out of the water using a slotted spoon and let it cool.

MIX THE MAYONNAISE with chopped lovage leaves.

SLICE THE ROE. Melt butter in a saucepan and fry the cod roe slices on both sides until they are golden.

PLACE THE COD ROE SLICES ON RYE BREAD and top it off with a tablespoon lovage mayo. Sprinkle with chopped lovage leaves and serve with lemon right away while the cod roe is still warm.
