Winter Bix with Eggs Sunny Side Up

Ingredients

WINTER BIX
200 g beetroots, cubes
300 g celeriac, cubes
300 g potatoes
1 onion, finely chopped
2 sticks celery
2 carrots
1 tbsp butter
1 tbsp flavourless oil
2 cloves garlic, finely chopped
Salt and freshly ground pepper

EGGS SUNNY SIDE UP
4 large eggs
A little butter for frying

SERVING
4 slices of rye bread

Method

PEEL BEETROOTS AND CELERIAC and cut them in cubes. Rinse potatoes and cut them in cubes. Slice the celery inclusive the top. Peel the carrots, split them, and cut in big cubes.

MELT BUTTER AND OIL IN A FRYING PAN, add garlic, beetroot, potato, celeriac, and onion. Sauté for 15 minutes at medium heat, add carrot and celery and sauté for another 10 minutes. Season to taste with salt and pepper.

FRY THE EGGS IN BUTTER ON A PAN. Season to taste with salt and pepper. Serve the bix mix on rye bread with eggs sunny side up on top.
